Ingredients for the Crust:

1 ½ cups chocolate cookie crumbs

1/4 cup melted unsalted butter

2 tablespoons granulated sugar

Ingredients for the Filling:

3 (8 oz) packages cream cheese, softened

1 cup granulated sugar

3 large eggs

1 teaspoon vanilla extract

8 oz Toblerone chocolate, melted and slightly cooled

1 cup heavy cream

Additional Toblerone chocolate for garnish

Preheat the Oven and Prepare the Crust:

  • Preheat your oven to 325°F (160°C).
  • In a mixing bowl, combine the chocolate cookie crumbs, melted butter, and granulated sugar. Mix well until the crumbs are evenly coated.
  • Press the crumb mixture firmly into the bottom of a 9-inch springform pan to create an even crust.
  • Place the pan in the refrigerator while you prepare the filling.

Prepare the Filling:

  • In a large mixing bowl, beat the cream cheese until smooth and creamy.
  • Gradually add the granulated sugar and continue beating until well combined.
  • Add the eggs, one at a time, mixing well after each addition.
  • Stir in the vanilla extract.
  • Pour in the melted Toblerone chocolate and mix until smooth and thoroughly combined.
  • In a separate bowl, whip the heavy cream until stiff peaks form.
  • Gently fold the whipped cream into the cream cheese mixture until fully incorporated.

Bake the Cheesecake:

  • Remove the prepared crust from the refrigerator and pour the filling over the crust, spreading it evenly.
  • Tap the pan gently on the countertop to release any air bubbles.
  • Place the springform pan on a baking sheet and transfer it to the preheated oven.
  • Bake for 55-60 minutes, or until the edges are set and the center is slightly jiggly.
  • Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.

Chill and Garnish:

  • After an hour, remove the cheesecake from the oven and let it cool completely at room temperature.
  • Once cooled, cover the cheesecake with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow it to set and develop flavors.
  • Before serving, remove the sides of the springform pan and carefully transfer the cheesecake to a serving platter.
  • Garnish with additional Toblerone chocolate, either grated or chopped, for an elegant touch.

Presentation and Serving:

  • Slice the Toblerone Cheesecake into portions and serve chilled.
  • Enjoy the velvety smoothness and rich chocolate flavor with each decadent bite.
  • You can serve it as is or pair it with a dollop of whipped cream, a drizzle of chocolate sauce, or fresh berries for added flair.
