For the Chocolate Crust:

  • 1 cup chocolate cookie crumbs (chocolate graham crackers or Oreo cookies work well)
  • 3 tablespoons unsalted butter, melted
  • 1 tablespoon granulated sugar

For the Cheesecake Filling:

  • 16 ounces (2 blocks) cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/4 cup sour cream
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup semi-sweet chocolate chips, melted and cooled

  1. Preheat your air fryer to 320°F (160°C).
  2. In a medium bowl, combine the chocolate cookie crumbs, melted butter, and sugar for the crust. Mix until the crumbs are evenly coated.
  3. Line the bottom of a square or round pan that fits into your air fryer with parchment paper. Press the cookie mixture evenly into the bottom of the pan to form the crust.
  4. In a large mixing bowl, beat the softened cream cheese and sugar until smooth and creamy.
  5. Add the sour cream, eggs, and vanilla extract to the cream cheese mixture, and continue beating until well combined.
  6. Melt the semi-sweet chocolate chips in the microwave or using a double boiler. Let the melted chocolate cool slightly, and then stir it into the cheesecake batter until fully incorporated.
  7. Pour the chocolate cheesecake filling over the cookie crust in the pan, spreading it evenly.
  8. Place the pan in the air fryer basket, and cook the cheesecake bites for 25-30 minutes until the edges are set, but the center still has a slight jiggle.
  9. Once done, remove the pan from the air fryer and let the cheesecake cool to room temperature. Then refrigerate it for at least 2 hours or until fully chilled and firm.
  10. Once the cheesecake is chilled, remove it from the pan using the parchment paper and cut it into bite-sized squares or any desired shape.
  11. Serve the Air Fryer Chocolate Cheesecake Bites with a dollop of whipped cream, a handful of fresh berries, or a sprinkle of chocolate shavings for an elegant finishing touch.
