Air Fryer Chocolate Cheesecake Bites

Ingredients:

For the Chocolate Crust:

  • 1 cup chocolate cookie crumbs (chocolate graham crackers or Oreo cookies work well)
  • 3 tablespoons unsalted butter, melted
  • 1 tablespoon granulated sugar

For the Cheesecake Filling:

  • 16 ounces (2 blocks) cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/4 cup sour cream
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup semi-sweet chocolate chips, melted and cooled

Instructions:
  1. Preheat your air fryer to 320°F (160°C).
  2. In a medium bowl, combine the chocolate cookie crumbs, melted butter, and sugar for the crust. Mix until the crumbs are evenly coated.
  3. Line the bottom of a square or round pan that fits into your air fryer with parchment paper. Press the cookie mixture evenly into the bottom of the pan to form the crust.
  4. In a large mixing bowl, beat the softened cream cheese and sugar until smooth and creamy.
  5. Add the sour cream, eggs, and vanilla extract to the cream cheese mixture, and continue beating until well combined.

  9. Once done, remove the pan from the air fryer and let the cheesecake cool to room temperature. Then refrigerate it for at least 2 hours or until fully chilled and firm.
