Ingredients:
For the Chocolate Crust:
- 1 cup chocolate cookie crumbs (chocolate graham crackers or Oreo cookies work well)
- 3 tablespoons unsalted butter, melted
- 1 tablespoon granulated sugar
For the Cheesecake Filling:
- 16 ounces (2 blocks) cream cheese, softened
- 1/2 cup granulated sugar
- 1/4 cup sour cream
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup semi-sweet chocolate chips, melted and cooled
Instructions:
- Preheat your air fryer to 320°F (160°C).
- In a medium bowl, combine the chocolate cookie crumbs, melted butter, and sugar for the crust. Mix until the crumbs are evenly coated.
- Line the bottom of a square or round pan that fits into your air fryer with parchment paper. Press the cookie mixture evenly into the bottom of the pan to form the crust.
- In a large mixing bowl, beat the softened cream cheese and sugar until smooth and creamy.
- Add the sour cream, eggs, and vanilla extract to the cream cheese mixture, and continue beating until well combined.
- Melt the semi-sweet chocolate chips in the microwave or using a double boiler. Let the melted chocolate cool slightly, and then stir it into the cheesecake batter until fully incorporated.
- Pour the chocolate cheesecake filling over the cookie crust in the pan, spreading it evenly.
- Place the pan in the air fryer basket, and cook the cheesecake bites for 25-30 minutes until the edges are set, but the center still has a slight jiggle.
- Once done, remove the pan from the air fryer and let the cheesecake cool to room temperature. Then refrigerate it for at least 2 hours or until fully chilled and firm.
- Once the cheesecake is chilled, remove it from the pan using the parchment paper and cut it into bite-sized squares or any desired shape.
- Serve the Air Fryer Chocolate Cheesecake Bites with a dollop of whipped cream, a handful of fresh berries, or a sprinkle of chocolate shavings for an elegant finishing touch.
